Easy Cheesy No Bake Macaroni Filipino Style

 While doing my groceries, I noticed that a lot are instant noodles, instant snack and the likes. One of the main reasons is that my kids love to eat, they want it fast and with minimal effort. Of course like most kids, they love pasta noodle dishes! So, I decided that I want to lessen instant ones.  But swore that I would have different kinds of pasta sauces for them to reheat whenever they're hungry or they just want to eat (which is always the case lol ). For a longer shelf life, you can just put the sauces in the freezer, and cook the fresh pasta. That way, everyone's happy! So, here is the first pasta dish recipes that you can expect in my fridge from now on.  Let's begin!


Easy Cheesy No Bake Macaroni Filipino Style


Cook your pasta !

Once the water is boiling, put the macaroni pasta, add some salt and oil. Once cooked, drain and set aside.


Start with your Red Spaghetti Sauce !


Using a non stick sauce pan, saute your ground beef or ground pork together with 2 tbsp butter. Let the meat release its oil a bit, then you can add 10pcs of crush garlic and 2 medium sized diced onions. Saute until the onions are translucent. Add your choice of hotdogs, sliced into pieces, sliced button mushrooms and a medium sized, diced bell pepper. Saute until hotdogs are cooked. Next one to add onto the pan is your choice of tomato sauce. I used the ones with flavor, since the plan is to make the process easier and faster. For more flavor, I added pork bouillon or pork cube, as we call it here in the Philippines. For a sweeter flavor, I added 1/4c of condensed milk. Let it simmer for about 5 to 10 minutes. This is the time to adjust the flavor based on your preference. Then, set aside !

The White Sauce on Top !

Using another non stick pan, on a medium heat, add 2tbsp butter and 1/4 cup flour. Cook the flour, then little by little add 1 cup of milk. You may see the butter and flour solidify a bit, but don't worry, it happens. Just continue mixing until it becomes smooth. Add another cup of milk, grated cheddar cheese and any cheese you would want to add. Mix and let it simmer. Consistency should be almost runny. Set Aside. 


Assemble !

For presentation, we want to layer all the elements we did. Using a shallow serving bowl, put your cooked pasta, then the red sauce and then the white sauce on top. Sprinkle with dried parsley, and you are done !

Papa's Easy Filipino Style Sweet and Sour Pork Recipe

Writing this on All Soul's day 2023 is a sweet and sour coincidence. Before my papa died, I wrote several of his recipes on my diary but I never got the chance or the gut to do it. I was craving for sweet and sour pork this week, so I decided to cook his Filipino style Sweet and Sour Pork for the first time. I was surprised that it came out just the way he cooked it. It's a dish that I would surely cook regularly for our "ulam" list. Let me show you how I cooked it. And I am so glad that I was able to document it through my vlogs. In a way it's  a tribute to a great man who loves to cook for his family and friends because he knew it will instantly become a hit! This is my papa's Pinoy Style Sweet and Sour Pork recipe. It is so easy, but the taste is so surprisingly good ! Restaurant level recipes. Let's begin !




 Papa's Easy Filipino Style Sweet and Sour Pork Recipe


Prep your meat :

500g Pork Belly Liempo sliced into strips

Wash and drain

Put your pork in a bowl and start adding your seasoning


Add flavors to your Pork

In a bowl, add the pork and all the ingredients listed below:

1 tsp salt

1 tsp ground pepper

1/4 cup cornstarch

Set aside


Start Frying !

On a medium heat pan

add enough oil to cover the meat, pre heat

In another bowl, beat 3 eggs with a pinch of salt 

Dip one strip pork in the egg mixture

drop onto the preheated oil repeat until there's no more room for another.

Flip the other side until its golden brown 

once everything is finished, drain the oil and set aside


Cook your Sweet and sour sauce

Saute in oil on the same pan, reduce the oil to 2 tbsp:

 7pcs crushed garlic

1 tbsp sliced ginger

simmer a bit

1tsp salt and 1/2 tsp pepper

2 medium sized onion, quartered

2 medium size tomatoes, quartered

simmer a bit

add 1 cup Banana Ketchup

1/4 c water

1 medium sized, bell pepper, cubed

2 tbsp sugar

Simmer for 5 minutes

You are done.


Serve and enjoy!

Transfer your fried pork on a serving plate and pour the sauce on top ! 

It's that easy !

Shawarma Inspired - Pinoy Shawarma Rice Recipe

 Shawarma rice became a popular dish in the Philippines because there are a lot of pop up stores that sell them for a very low cost. Since then it also became a popular recipe on Tiktok coz a lot of content creators are remaking their own version of the Shawarma rice dish. We've been craving for this too, but the truth is, the taste from the stores nearby, is not the way we like it, which is why we came up with our own recipe. Here is our take on the Pinoy version Shawarma rice recipe, and I think this is way closer to those we can call "authentic" . Let's begin !






Shawarma Inspired - Pinoy Shawarma Rice Recipe 


The Rice:

Cook your rice the normal way you do it, but add a tsp of turmeric powder before cooking. 

Set aside.


 Flavor your Beef: 

In a bowl, add everything together:

500g ground beef 

1/2 tsp cumin powder

1tsp curry powder

2 tsp salt

1/2 tsp ground pepper

2 tsp mustard

2 tsp onion powder

Hand mix for about 7mins, and make sure that everything is mixed thoroughly. 

This will ensure that each flavors are incorporated.


Cook your flavored Beef:

Saute your first beef on a non stick pan, medium heat. What we want here is to encourage the oil out of the beef, then we can add the minced garlic and minced onion. You may add more oil if necessary. Saute until the beef is golden brown. Set Aside.

Do the white sauce:

In a shallow bowl, add 1-2 pcs grated garlic or 2 tbsp garlic powder ( you may adjust this based on your taste ) , add 220g All purpose cream and 2 tbsp mayo. Stir, until there's no more lumps. The mixture should be runny. You may use a wire whisk if you have it, for an easier process. Then you may transfer to a squeeze bottle. You can skip this process, but its just more fun when you serve it like the ones from the pop up stores, right? Set aside. 


Assemble Shawarma rice:

Put your cooked turmeric rice on a serving bowl. Then add some sliced cucumber, sliced onion and sliced tomatoes on the side. Put your cooked beef on top of the rice. Drizzle with the white sauce, and generously. Serve and enjoy !

Shrimp Hakaw Recipe

 On my very first dates with Chef Nolz, one of our favorite places to eat is a Chinese restaurant located in Banawe, Quezon city. My good friend would always recommend a Shrimp Hakaw. We loved it the first try!  It became one of our favorite Dimsum in an instant. As years go by, our taste changed and we crave for premium and authentic taste. Places serving authentic Chinese dimsum are mostly outdside our city, so to cut the story short, Nolz came up with his own recipe that we do at home. Here is our Shrimp Hakaw Recipe . This is our personal recipe , needless to say , this Dimsum recipe should be your favorite too !





Shrimp Hakaw Recipe


Prepare the Major Ingredients , put your heart into it :

1 kg Fresh shrimp - pound or slice into tiniest pieces that you can do. 
5pcs of medium sizes Dried Shitake Mushrooms - soak it first in boiling water to soften, drain and cut into tiny pieces


Do the Shrimp Filling with feelings !

In a shallow bowl, put everything together :

Prepared Shrimp and mushrooms
1tsp rock salt
1 tsp Chicken powder
1/2 tsp ground pepper
1tbsp potato starch or tapioca starch
1 tbsp Sesame oil
2tbsp grated ginger

Hand mix everything until it becomes a thick paste. 
Cover with cling wrap and set aside for 30mins. 

Do the wrapper like a lover:

In another bowl, 
add 1 cup of potato starch or tapioca starch whichever you have,
1 cup of cornstarch 
and add 1 1/4 cup of hot water. Mix with a spatula or your hands. Its hot ! 

Knead for about 6-7mins until it becomes a dough ball.
Roll into a long log for about 2 inches thick 
Then Cut into 2 inches balls

Press one ball to flatten it, you can also use your hands or a dough cutter or
 a knife cleaver to press and flatten it
this should be as thin as you can. if you have a rolling pin, you can use it too !
There are no rules on this one, just do what you must.

Combine perfectly imperfect

With the wrapper in your hands, scoop out 1 tbsp of the shrimp Hakaw filling onto the wrapper
do fold and press, until the filling is locked inside the wrapper. press any hole that may appear. 
Very easy to do, just follow what i did on the video :)

Steam it baby !

Steam for 15 - 20 mins !
dont worry if it over cooks for a bit, this Shrimp Hakaw recipe would still be deliciuos !
